Watermelon Gazpacho

The Spanish  famously invented Gazpacho. It can take many forms, but in essence, it is a chilled raw soup. Perfect for hot days or post sweaty workouts. 

Make this when watermelons are plentiful.

Watermelon Gazpacho Recipe

Ingredients

2kg of watermelon (weighed without rind)
1 large vine ripened tomato ?
1/2 large continental cucumber ?
1/2 red capsicum
1/2 a salad onion (mild)
1 lime juiced ?
1 knob ginger minced
Fresh sliced chilli ? to taste
1/2 cup Mint leaves
1/4 cup basil leaves ?

Method

Blend about 3 cups of watermelon then add more chunks until it reaches the 1 litre mark on the jug. Add half the mint, lime juice, ginger and blend until smooth. Pour into a large bowl. Chop the remaining ingredients (tomato, capsicum, onion and remaining watermelon) into small cubes. Place everything in one large bowl and mix. Chill until time to serve.

Tip. Hand tearing greens such as herbs, prevents them from turning brown.
